We were presented a brief from the Park Hotel Group to re-imagine the new norm for hotel all-day dining concepts. This meant that the solution had to be a beautiful combination of comfort, versatility and tell a very unique story that even locals would want to check out.
The result is Porta, a hotel restaurant that has been designed to meet the needs of its users throughout the day. From a buffet in the morning to a quick lunch solution to engaging retail and bar options. The internal operational observations lead to a reimagining of the cold prep area to support buffet replenishment, a butcher station and retail displays.
The story we created was of a well-travelled import and fine foods retailer opening up his secret cargo to the neighborhood. This initiated the creation of rooms throughout the restaurant and a strong symbolism and branding of voyage and exploration.
